Zucchini Fritter Recipe

Kickstart your 5+ a day
If you’ve been looking for a bread or hash alternative that’s low carb, versatile and delicious, the FFAH zucchini fritters are a game changer.
Everyone loves to gorge on a big weekend breakfast and these fritters are a great way to change up the usual. You can kickstart your 5+ a day in the morning and if you’re keen to double down on the protein; top it with bacon, eggs and sausages.
Ingredients
3 medium zucchinis, grated
1 spring onion, finely sliced
1 lemon, zested
2 eggs, beaten
½ cup almond flour
3 tbsp buckwheat flour
1 tsp basil, dried
Salt and pepper to taste
Olive oil, for cooking
To serve
½ avocado
1 cup rocket or greens
Method
Place the grated zucchini in a tea towel or muslin cloth. Squeeze over a bowl or the sink, continuing to squeeze until no more liquid comes out. Add to a clean bowl.
Add in the lemon zest, onion and eggs and stir to combine.
Add on the almond meal, buckwheat flour, basil, salt and pepper. Stir to combine, forming a dough.
Heat a large pan over a medium heat and add a generous amount of olive oil.
Drop ¼ cup amounts of the dough into the pan. Flatten slightly with a spatula and cook for 3-4 minutes each side, until golden brown. Remove and drain on paper towels.
Serve with rocket and avocado.
