Heirloom Tomato Salad

Let's start with the heirloom tomatoes - a true star of the season. These vibrant and juicy tomatoes come in a variety of shapes, sizes, and colours, each with its own unique flavor profile. From the sweet cherry tomatoes to the tangy green zebras, there's an heirloom tomato out there for every palate.

Simplicity is key. Start by selecting a variety of heirloom tomatoes and slicing them into bite-sized pieces. Arrange them beautifully on a platter, drizzle with high-quality olive oil, and sprinkle with a pinch of sea salt to bring out their natural flavor. For an extra touch of indulgence, add some creamy burrata to the mix. The velvety texture of the cheese pairs beautifully with the acidity of the tomatoes, creating a dish that's both elegant and indulgent.

Another way to elevate this dish is to add fresh herbs such as basil, parsley, or thyme. Adding fresh herbs rounds this dish off wonderfully, and keeps it fresh!

A comforting and hearty side that's perfect for a cozy winter dinner. Yams are an incredibly versatile root vegetable that can be cooked in many ways, but for this dish, we're roasting them with a sweet and nutty twist. Yams speak for themselves, don’t peel or chop them. Toss them with a mixture of brown sugar, cinnamon, and a pinch of salt, and then roast them in the oven at 180°C for 45 minutes or until they're tender and caramelised. While the yams are roasting, it's time to prepare the walnut topping. In a cast iron pan, melt some butter and add in some chopped walnuts and a sprinkle of brown sugar. Cook over medium heat until the walnuts are toasted and the sugar has melted into a sticky glaze. When the yams are done roasting, transfer them to a serving dish and top them with the walnut mixture. The combination of the sweet and earthy yams with the crunchy and nutty topping is truly a match made in heaven. Consider adding a hint of citrus to the mix. A squeeze of fresh lemon juice or the zest of an orange can really brighten up the flavours and add a touch of elegance to the dish.
