White Rum provides the drink with the fortification the drink needs as well as adding a touch of sweetness, adding lemon juice to the drink provides it with a tang which will help enhance the fruit. Adding Watermelon gives the drink a fruity burst and mint gives it a herbaceous, refreshing finish.
Ingredients:
30mls White Rum
20mls Lemon
10mls Simple Syrup
4x Chunk Watermelon
8x Mint Leaf
(Watermelon Slice and Mint Sprig for Garnish)
How To:
Add all ingredients to a cocktail tin, using a blunt object muddle the Watermelon chunks and mint leaves to release the juice of the watermelon and essence of the mint. When all ingredients are in a shaker add ice to the tin and shake the drink for 6 seconds, once shaken, decant into a highball glass add a straw and garnish.
